Banana Burgers?!! Oh Yes!

Ever thought bananas could burger? Think again! This vegan delight combines green bananas, mushrooms, and rice, offering a texture reminiscent of classic hamburgers with a subtle banana twist. But wait, there's more! These patties are crowned with a refreshing banana vinaigrette coleslaw that'll make you rethink everything you knew about banana's place on the dinner table. Get ready to savor the unexpected!


Banana Burgers

Ingredients:

  • 3 green bananas, small diced
  • 1 ripe yellow banana, mashed
  • 1/2 yellow onion, small diced
  • 1-1/2 cup mushrooms, small diced
  • 1 cup white or brown rice, cooked and cooled
  • 1/2 cup Panko breadcrumbs
  • 1 Tbsp potato starch
  • 1 tsp celery salt
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste

Instructions:

  • Dice green bananas and place into a large mixing bowl.
  • Mash ripe banana and add to green bananas.
  • In a sauté pan, cook onions and mushrooms. Set aside to cool.
  • Add cooked onion/mushroom mixture, rice, panko, potato starch, and seasonings to bowl and then mix all the ingredients together.
  • Form mixture into patties and place in the refrigerator for 15 minutes.
  • Cook on medium heat until golden brown.

Banana Vinaigrette:

  • 1 medium banana, ripe
  • 1/2 cup water
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • 1 Tbsp mustard
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp citric acid

Place vinaigrette ingredients in blender and blend until smooth.

Banana Vinaigrette Coleslaw:

  • 1-1/2 cup won bok, julienned
  • 1 cup red cabbage, julienned
  • 1/2 cup banana vinaigrette
  • 1/4 cup red bell pepper, julienned
  • 1/4 cup orange bell pepper, julienned

Mix 1/2 cup banana vinaigrette with coleslaw vegetables. Add a heaping spoonful on top of each banana burger. Serve with or without buns.
